Na falta de uma resposta, encontrei uma forma de fazer em linha de comando. Claro que existe o DVD::RIP, mas aí vai:
Intalar o lsdvd e transcode.
Verificar o conteúdo do DVD com o lsdvd:

Para ripar no formato wav algum título do DVD:
transcode -i /dev/dvd -x dvd -T 1,2,1 -a 0 -y null,wav -m track.wav
-i = entrada, neste caso o dispositivo de DVD /dev/dvd
-x = o módulo importado pelo transcode, nesse caso dvd
-T = título = 1, capítulo = 2 e ângulo da câmera = 1 do DVD.
-a = extrai a faixa de áudio
-y = vídeo/áudio formatos dos módulos de exportação (neste caso video = null e audio = wav)
-m = nome do arquivo.
